Activity goal

With the aim of deepening understanding of mold in food hygiene and linking it to quality control, we will disseminate information about mold from various angles, not just identification using MALDI-TOF MS.

Activity content

Construction and operation of a MALDI-TOF MS database for identification of food-borne molds.

In addition to practicing identification methods using MALDI-TOF MS, we will also disseminate information including traditional identification methods and mold characteristics based on observations of food-borne molds.
